Corn smut: Mushroom in habitat Crop cultivation in the NatureSpots App "High dynamic range foto Builenbrand oder Maisbrand (Ustilago maydis) ist ein Feuerpilz, der Mais und Teosinte befallen kann. Obwohl es alle Pflanzenteile befallen kann, betrifft es hauptsächlich das meristematische Gewebe, insbesondere das der Spadix. Der Pilz dringt über den Griffel in den Eierstock ein, woraufhin ein Tumor ähnlich wie Pilze erscheint. Junge Tumore bestehen aus sehr langen Pflanzenzellen mit Pilzfäden dazwischen und haben dann noch eine feste Struktur. Später bilden sich olivbraune bis blauschwarze Brandflecken und es entsteht eine lockere Struktur. Ustilago kommt vom lateinischen Wort ustilare, was Feuer bedeutet. In Mexiko werden die betroffenen, unreifen Kolben als Delikatesse gegessen, wo sie Huitlacoche genannt werden. Die Flaschen werden zu diesem Zweck 2 bis 3 Wochen nach der Infektion geerntet und anschließend gekocht.
